Vegan Seafood Rolls

Ingredients
- 5 hotdog buns
- 1/4 cup vegan butter, melted
- 1/2 cup vegan mayo
- 1/2 tbsp Dijon mustard
- 5 rind of lemon
- 5 juice of lemon
- 1 dill pickle, finely diced
- 2 tbsp fresh dill, finely chopped
- 1 stalk celery, finely chopped
- 400g vegan prawns, roughly diced or shredded and defrosted
- 1/2 tbsp black pepper
- curly lettuce, to serve
- smoked paprika, to serve
- dill fronds, cut small to serve
Instructions
In a large mixing bowl, whisk together mayo, lemon zest, lemon juice, Dijon mustard, and chopped herbs.
Add chopped vegan prawns, celery, pickles, and black pepper to the bowl. Mix well until everything is evenly coated.
If the hotdog buns are unsliced, carefully slice them from the top without cutting all the way through.
Brush all sides of the buns with melted butter and toast in the air fryer at 200ºC for 4–5 minutes, or until golden.
Fill each bun with crisp lettuce and spoon in the vegan seafood salad.
Sprinkle with a pinch of smoked paprika and garnish with extra dill. Serve immediately.
