Portuguese Tomato Rice (Arroz de Tomate)

Prep Time: 10m | Cook Time: 40m | Servings: 4

Ingredients

  • 2 tbsp olive oil
  • 4 cloves garlic
  • 1 onion
  • 450g ripe cherry tomatoes, chopped
  • 1 tbsp tomato paste
  • Salt and pepper, to taste
  • 1/2 tsp smoked paprika
  • 1 1/4 cup white rice
  • 3 cups veggie stock
  • 1/2 cup white wine
  • 2 bay leaves
  • 1 tbsp butter
  • Coriander, for garnishing

Instructions

  1. Slice all tomatoes in half. Finely chop the onion and mince the garlic. Rinse your rice 2-3 times to remove excess starch.
  2. Heat 2-3 tablespoons of olive oil in a large frypan. Sauté the onion and garlic until the onion softens. Add the tomatoes, tomato paste, paprika, and season with salt and pepper. Cook for about 5 minutes until the tomatoes break down.
  3. Pour in the wine and cook for a few minutes until the mixture becomes saucy. Add the rice, vegetable stock, and bay leaves. Cover with a lid and simmer over medium heat for around 20 minutes, stirring occasionally to prevent sticking.
  4. If needed, add a splash of water, but the rice should be fully cooked and saucy. Turn off the heat and stir in the butter until melted. Garnish with fresh coriander and serve warm!
