Pan-Fried Gnocchi with Butter and Sage

Ingredients
- 500g packaged uncooked gnocchi (or 3 cups)
- 2 tbsp olive oil
- 1/3 cup butter (I use dairy-free)
- 12 large fresh sage leaves
- 1 tsp lemon zest
- 1/4 tsp salt
- 1/4 tsp black pepper
- Parmesan (vegan or regular), to serve (optional)
Instructions
Cook the gnocchi. Bring a large pot of salted water to a boil. Add the gnocchi and cook for 1-2 minutes or until they float to the surface.
Pan-fry the gnocchi. Meanwhile, heat the olive oil in a large non-stick frying pan. Using a slotted spoon, transfer the gnocchi into the pan, shaking off excess water. Keep them in a single layer and fry until golden brown. Set aside.
Make the sage butter. Wipe the pan with a paper towel and return it to low-medium heat. Melt the butter, then add the sage leaves. Fry for a few minutes, stirring occasionally, until the leaves are crispy. Avoid high heat, as the butter can burn, but don’t go too low, or the sage will become oily instead of crispy.
Combine and season. Return the gnocchi to the pan, season with salt, pepper, and lemon zest, and toss well to coat in the butter.
Serve and enjoy! Plate immediately and top with grated parmesan if desired.
