Vegan Kebab Sandwiches

Ingredients
Kebab Meat
- 500g vegan mince
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp cayenne
- 1 tsp smoked paprika
- 1/2 tsp all spice
- 1/4 tsp sumac
- 1/4 tsp cumin
- 1/2 tsp salt
- 1 jalapeño, finely diced
- 1 tomato, finely diced
- 1/2 white onion, grated and squeezed
- 1/4 cup chopped parsley
- 1/4 cup chopped coriander
- 50g vegan feta
- 3 cloves garlic, minced
Garlic Tahini Sauce
- 1 cup coconut yogurt (I would use mayo next time I reckon)
- 1/4 cup tahini
- 1/4 cup lemon juice
- zest of 1 lemon
- 2 tbsp vinegar
- 6 cloves garlic
- salt, to taste
- freshly cracked pepper
Other
- pita bread
- onion and parsley
- chilli sauce
- Fries
- fresh tomato
Instructions
Blend all sauce ingredients together until smooth. Taste and adjust seasoning with salt and freshly cracked pepper. Set aside.
In a large mixing bowl, combine the vegan mince, spices, grated and squeezed onion, chopped herbs, minced garlic, crumbled vegan feta, and finely diced jalapeño and tomato. Mix well until evenly incorporated.
Take portions of the mixture and form them into kebab shapes around thick wooden skewers (or just shape them into logs if you’re skipping the sticks).
Heat a pan over medium heat with a little oil and cook the kebabs, turning occasionally, until browned and cooked through.
Serve the kebabs on warm pita with fresh veggies, crispy fries, a drizzle of chilli sauce, and a generous amount of garlic tahini sauce. Enjoy immediately!
