Malaysian Banana Fritters

Ingredients
- 3 overripe bananas
- 1/8 cup water
- 3/4 cup all purpose flour (100g)
- 1/3 cup rice flour (40g)
- 1/4 cup tapioca starch
- 1 tsp baking powder
- 1/4 tsp salt
- 2 tbsp sugar
- High heat neutral oil for frying
- Caster sugar, to coat
Instructions
- In a large mixing bowl, mash the bananas. Add all remaining ingredients and mix well until a thick batter forms.
- Heat a few inches of oil in a pot to 180ºC. Using a small ice cream scoop or spoon, drop balls of batter directly into the hot oil.
- Fry for a few minutes, turning occasionally, until golden brown and puffed. Work in batches to avoid overcrowding the pot.
- Drain the fritters on paper towel. Let cool for 5 minutes, then toss in sugar if desired.
- Serve immediately while crispy and warm.
