Malaysian Banana Fritters

Ingredients

  • 3 overripe bananas
  • 1/8 cup water
  • 3/4 cup all purpose flour (100g)
  • 1/3 cup rice flour (40g)
  • 1/4 cup tapioca starch
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp sugar
  • High heat neutral oil for frying
  • Caster sugar, to coat

Instructions

  1. In a large mixing bowl, mash the bananas. Add all remaining ingredients and mix well until a thick batter forms.
  2. Heat a few inches of oil in a pot to 180ºC. Using a small ice cream scoop or spoon, drop balls of batter directly into the hot oil.
  3. Fry for a few minutes, turning occasionally, until golden brown and puffed. Work in batches to avoid overcrowding the pot.
  4. Drain the fritters on paper towel. Let cool for 5 minutes, then toss in sugar if desired.
  5. Serve immediately while crispy and warm.
