Vegan Chickpea 'Tuna' Salad

Ingredients
- 400g can chickpeas, drained
- 1/2 small purple onion
- 150g corn kernels
- 2 tbsp vegan mayo
- juice of 1/2-1 lemon - add depending on taste!
- 1/4-1/2 tsp salt
- fresh dill or basil, chopped (optional)
- freshly cracked black pepper
Instructions
Add chickpeas, onion and salt into a food processor and process until coarse. You don’t want a smooth paste, onions should be in small chunks as if they’d been finely diced.
Empty into a bowl and fold in mayo, lemon juice, corn kernels and any herbs. Taste and season as desired!
Serve!
Used my ‘tuna’ to make sushi!
