Quick Pickled Onions

Ingredients
- 1/2 cup vinegar
- 1 cup water, warm
- 1/3 cup sugar
- 2 tsp salt
Pickle Things
- 1 red onion, thinly sliced
- 1 tsp whole peppercorns
- 1/2 tsp chilli flakes, optional
- 1 bay leaf
Instructions
- Thinly slice the onion and pack the slices tightly into a clean glass jar. Sprinkle in peppercorns, chilli flakes, and add a dried bay leaf.
- In a jug, combine sugar, salt, and vinegar. Add warm water and stir until everything is fully dissolved.
- Pour the brine over the onions, ensuring they are fully submerged. If needed, make a little extra brine to top it up.
- Seal the jar with a lid and place it in the fridge. Onions will be ready in 3 days and will stay good for a few weeks.
