Oven-Baked Popcorn Cauliflower

Prep Time: 15m | Cook Time: 40m | Servings: 2-3

Ingredients

  • 1/2 head of cauliflower (400g)
  • 3/4 cup almond meal (OR crushed cornflakes - put ~3 cups into a blender!)
  • 1 1/2 tbsp nutritional yeast
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp paprika
  • 1/4 tsp cracked black pepper
  • 1/2 tsp salt
  • 3/4 cup gluten-free flour (chickpea flour works too, but use 1 cup chickpea flour)
  • 1 cup soy milk (250ml)

Instructions

Preheat oven to 180ºC.

Chop cauliflower into small florets.

In a mixing bowl, mix together almond meal, nutritional yeast, garlic powder, onion powder, paprika, black pepper and, salt until well combined. (Should look like weird yellow sand lol)

In a separate mixing bowl, whisk together gluten-free flour and soy milk - should form a thick batter!

Dip a floret into the batter mix, gently shake off any excess, then place into the almond meal weird-sand to cover completely. Shake off any excess ‘sand’ and then place onto a lined baking tray.

Repeat until you’ve finished with all the cauliflower!

Gently brush or spray cauliflower pieces with oil before putting the trays into the oven.

NOTE: I’M GOING TO DO ANOTHER TEST SOON WHERE I CRANK THE HEAT HIGHER AND BAKE FOR SHORTER BECAUSE THIS TOOK WAY TOO LONG! IF YOU FEEL CONFIDENT/JUST WANNA KEEP AN EYE ON THEM UNTIL THEY’RE CRISPY (I’M THINKING AROUND 200ºC FOR 30 MINS)- GO AHEAD! BUT IF YOU NEED INSTRUCTIONS - ’LL JUST LEAVE MY FIRST OVEN-INSTRUCTIONS HERE.

Bake for 20 minutes. Flip all the pieces, spray/brush a little more oil on the cauliflower pieces before returning to the oven. Rotate trays top and bottom if you are using more than one.

Bake for another 20 minutes! At this stage, mine weren’t as crispy as I would’ve liked them, but they tasted delicious. So stop baking now if you’re happy with your bites!

I turned the oven up to 200ºC and baked for another 10 mins just to sorta blast-broil them into golden-ness haha.

Serve with your favourite dipping sauce and enjoy!!
