Maple Cinnamon Granola (GF)



2 cups of buckwheat (soaked in water overnight, drained)
1 cup coconut flakes
1 cup shredded coconut
1/2 cup pumpkin seeds
1/2 cup almonds
1/2 tbsp cinnamon
1/2 tsp sea salt
1/2 cup maple syrup


1. Preheat oven to 120°C/250°F.
2. Mix all the ingredients together in large mixing bowl.
3. Spread onto baking trays about 1cm thick.
4. Bake in oven for 1-1.5 hours at 120ºC  or 250ºF for about 1 hour and then turn the oven off and let granola and oven cool down completely before packing away. The aim is to dry your granola out, so you can even put your oven at a lower temp for longer, or use a dehydrator. Everybody’s oven is different, so always keep an eye on your granola to avoid burning.
