Liz's LEVELED-UP Rabokki (라볶이)

Packed with delicious vegetables, has a smooth creamy sauce, is not too sweet and features noodles. This rabokki (ramen + tteokbokki = rabokki) is so damn EXTRA in the best way possible. So much F-L-A-V-O-U-R, texture and UMAMI UP. IN. DIS.

INGREDIENTS

serves 4

PASTE
2 tbsp gochujang
1 tbsp gochugaru
1 tsp sugar
1 tbsp soy sauce

FRY
1 tbsp oil
2 tbsp onion, grated
1 tbsp garlic, minced
8 vegan fishballs (optional) (180g)
1 cup mushrooms, sliced (70g)

STOCK
2 cups vegetable stock
1/4 cup dashima dried kelp (8g)
1/3 cup dried shiitake mushrooms (15g)
1/2 cup mirin

VEGGIES ROUND 1
1/4 cup carrot, cut into matchsticks (35g)
2-3 large leaves wombok cabbage (175g)

VEGGIES ROUND 2
1 cup broccoli florets (75g)
1/2 cup enoki mushrooms (40g)
1/4 cup spring onions (25g)

OTHER
500g tteok rice cakes
1 cake of dried instant ramen noodles
1 cup water
100g vegan mozzerella cheeze (I used the alterative dairy co)

TO SERVE
Korean roasted rice crackers
Spring onions
Toasted sesame seeds
Shredded nori

METHOD

1. PASTE: Mix all paste ingredients together to form a spicy paste!
2. FRY: In a large saucepan, heat up the oil, and fry onion, garlic, fishballs and mushroom until fragrant and brown.
3. STOCK: Add all the ingredients into the sauce pan and bring to the boil. Simmer for a further 5 minutes, stirring occasionally.
4. ROUND 1 VEG: Add all round 1 veggies and let them cook for 2 minutes.
5. Add the TTEOK rice cakes, stir to cover all the rice cakes and let the rice cakes cook a little.
6. Make a well in the middle of the ingredients and add the ramen and the 1 cup of water. Cook ramen in the centre of the pan and then take noodles out once they’re cooked through and set aside.
7. Add the CHEESE, stirring to let it melt a little and form a thick sauce.
8. ROUND 2 VEG: Add remaining vegetables and stir for a few more minutes until they’re all cooked through.
9. To serve, dish the rice cakes out onto a large dish. Form a well in the middle and place the noodles inside!
10. Sprinkle with toasted sesame, Korean roasted rice crackers, spring onions and/or shredded nori! LEVEL. UP. AND. ENJOY. YOUR. RABOKKI!!!!!
